Caudrina
In the early 1940's Redento
Dogliotti started to grow Moscato grapes in the hills between the
Langhe and Monferrato, heartland of the DOCG of Moscato d'Asti.
Dogliotti initially sold the biggest part of the crop to houses in
Asti, but this gradually changed when Redento's son Romano got
involved in the business in the 1960's. Newly developed techniques
used for the production of Asti Spumante were successfully adapted
by Romano to craft ultra-fresh Moscatos by keeping the must at a
temperature below 0 degrees Celsius in pressurised
autoclave (stainless steel tanks). With the temperature
shortly raised to about 20 degrees Celsius fermentation occurs
in intervals ensuring optimal freshness of aroma and flavour. When
alcohol levels reach 5.5 percent, fermentation is halted by
chilling the wine below freezing again, leaving it with sweetness
and a slight fizz. Romano's first wine produced along this line was
the Moscato d'Asti La Caudrina, its instant success inspiring
numerous growers in the region. It was later followed by the
prestigious La Galeisa, a single vineyard Moscato d'Asti
that is regarded as one of Italy's classic wines. The range is
complemented by the slightly sweet Asti Spumante La
Selvatica.
In 1997 Romano took over the estate from his father. A new era for the family started with the purchase of a new vineyard in Nizza Monferrato, planted with Barbera and supplying the grapes for the Barbera d'Asti La Solista and the Barbera d'Asti Superiore Montevenere.
