Moscato d'Asti DOCG La Caudrina 500ml
Product by: Caudrina
The grapes for La Caudrina are grown in 11 hectares of family owned vineyards in the hills around the village of Castiglione Tinella. Made in the estate's state-of-the-art cellar, Dogliotti's Moscato d'Asti is an undisputed leader for this variety.
Vinification
After handpicking the grapes are gently pressed. The must obtained is then filtered and allowed to rest in steel vats maintained at a constant temperature of about 2 degrees below zero. To start fermentation the temperature is raised to around 20 degrees Celsius and when alcohol levels reach 5.5 percent, fermentation is halted by chilling the wine below zero again, leaving it with approximately 120 grams of residual sugar and a slight fizz.
Tasting Note
The wine shows brilliant straw yellow with an elegantly intense and fruity bouquet, typical of the Moscato grape. The palate is pleasantly sweet, with a natural and light 'spritz' and balancing, refreshing acidity.
Food Matches
The wine is an excellent accompaniment to fruit and pastries such as the classic Italian Panettone.
