Who better to develop a range of crackers specifically suited to various cheeses, than someone who knows all about cheese? The owner of The Fine Cheese Company in Bath, Somerset was just that person.
They have introduced a range of really divine biscuits which includes three oat crackers, six different flavoured wheat crackers and three natural unflavoured crackers; each one specifically designed to match different types of cheese.
The range includes flavours such as basil crackers for Swiss cheese, fennel crackers for pungent cheese, celery crackers for blue cheese and mustard and black pepper oatcakes for cheddar cheese.
They have also created some delicious fruit pastes including quince, damson, fig, and chilli & lime along with some savoury pickles such as plum pickle for blue cheese. These make a great gift for cheese lovers (and unlike the cheese itself, don't need to be kept in the fridge up to Christmas day).
While not balsamic vinegar in the true sense, white balsamic vinegar is a white wine vinegar flavoured with grape must that hasn't been caramelised. It's often used in recipes where the sweet grapey flavour is required without the colour of balsamic vinegar. For something even more unusual try the white balsamic glaze, a thick syrupy sauce that is as clear as water but full of grapey goodness.
Every now and then we come across a product that we become addicted to and simply have to bring to WA. This was the case with Aunty Joan's Toffee, a hand made product from South Australia. This soft, very 'moreish' toffee is available in three flavours, Macadamia, Magic Mix (mixed nuts) and Almond.
Peter Wilson believes fine chocolate should equal fine wine in complexity and flavour. Hand made in the Yarra Valley, their white chocolate contains half the quantity of sugar than most white chocolate, not for the obvious health benefits but because it tastes much better. Also try the new 70% dark orange chocolate.
Lavoche is a Middle Eastern style crispbread that is used in place of crackers for dips and cheese. Simply Fine Foods from Queensland make a deliciously crisp version topped with poppy and sesame seeds.
Last Christmas we weren't able to keep up with the demand for Spoonfed Foods' Lamb and Ham (savoury) Jams. This year it will be the new Garlic Jam in short supply. Made with slowly roasted garlic, infused with lemon zest and lemon thyme, this intense, sticky jam will be a great accompaniment to roast meat (hot or cold) and with sharp cheeses.
From the only provider of hand milked salmon caviar in Australia comes Trout Caviar. Very similar in taste and texture to the salmon caviar, the trout caviar is a less expensive but still magical addition to any Christmas hors d'oeuvre.
If you are keen to make your own fruit mince pies this year, try Country Cuisine's fruit mince. Packed with fruit and minus the fillers and preservatives found in other brands we've come across, it's as good as making it yourself!
