Ferron Carnaroli super-fine rice is slightly longer and thinner than Vialone Nano. It has a slightly nutty flavour. Carnaroli rice is resistant to over-cooking. It has the highest amylose (starch) content of any risotto rice. This means that the rice is capable of absorbing fluid without losing its structure. Carnaroli rice is ideal when a large amount of fluid or stock is added, or when the condiment is wet. This is often the case with seafood condiments, which typically include fluid such as sauce or broth.
