This Icelandic salted cod (bacalao in Spanish) is salt cured and kept refrigerated. This allows for the flesh to retain its moist, fresh fish appearance when desalted. It will stay translucent and maintain a delicate texture when cooked or served raw in salads.
It comes in irregular shaped strips with no bones of about 5 to 7g each. Available by the kilo.
