Made with wine from cava (Macabeu, Xarel·lo and Parellada) using the Schützenbach 1823 method. It can be used as a substitute for balsamic herbs.
The Castell de Gardeny was a Templar House and was part of the line of castles that defended the Ebro border that separated Al-Andalus from the Christian territories. This vinegar is made by a small Catalan company, with over a hundred years of experience (1908), which has devoted its main attention to innovation and quality improvement.
