Tocino refers to cured pork, typically a fatty cut like pork belly, that is first salted and often seasoned with sugar and other flavorings, then cooked until it’s tender and caramelized. At La Boqueria they are nothing if not traditionalists. This is a natural back-fat without any protein glues.

This salt cured, smoked pig’s back-fat is brilliant for eating as is, or in cooking.
