Low acyl gellan gum is a deacylated type of gellan gum with white fine floating powder. When dissolved in water, the solution made by this type of gellan gum is clear or transparent. Due to its excellent fluid gel properties, it will keep cubes or insoluble particles suspended in beverages. It has to be used at hot temperature and it’s stable when used in acidic environment. It can be used for fruit preparation, jelly insert, milk dessert.
