Originating from Menorca, the second largest Balearic Island between the coast of Spain and the Italian Island of Sardinia. This curd is shaped into a square using a special cotton cloth called a fogasser. The cheese is then aged for 3 months resulting in a distinct creamy, buttery flavour.
The texture is close, dense with occasional hole throughout the paste which is ivory in colour. The orange rind develops as the cheese is rubbed with oil and paprika during the curing.
