An Italian hard, granulated cheese made in the Emilia-Romagna region.
Sweet, fruity, slightly nutty and a sharp finish with tyrosine crystals that will continue to develop as the cheese ages.
Add to salads, grate over pasta dishes, or enjoy on it’s own with a full bodied Italian red wine.
Approx 2-2.5kg cuts. Raw cows milk. Aged 24 months.
