Rustichella Squid Ink Linguine (6kg)

Rustichella d’Abruzzo sources the world’s best quality durum wheat semola with high protein and gluten content.  Semola is coarse flour made with durum wheat.  Durum, meaning hard, is the strongest wheat.

This exceptional linguine has been dyed with squid ink giving it a delicate seawater flavour.  It is at its best using when dressed with a light tomato based sauce with seafood. Also delicious with a simple pesto.

Traditional pasta production is not a delicate process.  The semola must have great strength to withstand heavy pressures and the slow-drying process.  Only the strongest semola creates pasta which retains their shape and displays exceptional flavours.  Semola is mixed with water to create dough.  The dough is repeatedly extruded (pushed) through solid bronze dies and is then cut into shapes.  Bronze extrusion creates a porous surface, which allows the sauce to fully flavour the pasta.  Unlike other brands, Rustichella d’Abruzzo pasta can be cooked to taste because it is not hardened by the high temperature quick drying used in industrial production.  Instead it is dried slowly for between 40 and 60 hours, depending on the shape.
