Nuruk is a natural fermentation starter. This unique extract is essentially like the Japanese liquid Koji however it has been aged for 4 years. Five times saltier than soy, this is beautiful on meat and often used as a tenderiser. Also suitable on fish or used on salad. Salt ordinarily would wilt or extract water from vegetables, brush on this liquid and it will preserve it for about 3 days in its original state. Try mixing it with citrus vinegar, and olive oil to make a delicious dressing.
