Butifarra Blanca is the most iconic small-good in Catalan cooking. This sausage is a boiled small good and hung to dry for a short period of time. It is made from lean meat, the finest quality pork fat and a simple blend of spices. It has a mild salt and peppery flavour profile and a chunky gelatinous porcine texture. It can be consumed raw or slightly grilled.
